I take it you’ve never eaten a holiday meal where everyone comes at 11 with food and it sits out all day then everyone loads up a plate of leftovers. You may also have never dined in a restaurant. If the cavemen and cowboys had been pussies like us we would never have survived as a species.

Honestly the visual and smell test are pretty accurate. If you don't see mold and it doesn't smell rotten you're probably fine

As long as it is not bubbling at room temp

That’s not how it works. By your logic, I can leave raw chicken on my counter for 5 days, then as long as I heat it to 170, I’m fine.
Heating to 170 kills A CERTAIN AMOUNT of bacteria. If more than that amount has grown in the food, 170 does not kill it all.

Bring it to a boil and chow down.

It's not always the live bacteria, it is the toxins they produce, and they don't go away when cooked. You will be perfectly fine with Staph Aureus living in and on you. What makes you sick is the build up of toxins when it lives on it's food that you think is only your food.
I don't think anything is going to happen in this situation, but you can't always assume cooking questionable food will make it 100% safe. Your immune system can fight off a bad bacteria, but it can do little to counteract a toxin before getting sick and going through the motions.

OP said overnight for a salty acidic tomato sauce dumbass, not 5 days for salmonella’s paradise
By your logic, he’s fine

So we’re to take food handling advice from people who had no concept of germs at a time when dysentery was a regular occurrence?

My mother would put a raw chicken on the counter in the am so she would remember to put it in the oven later that afternoon. Usually sat out for 6-8 hours.
She never got sick.

My mother never wore a seat belt in the car. She never got hurt. So that means I couldn’t get hurt in a car wreck with no seatbelt, right?

Enjoy your impending diarrhea.

Well back in the 60’s seatbelts were an option, many cars didn’t have them. My mother drove around without a seat belt and never got hurt.

A little mold is good for you. Penicillin is made from mold.

On a similar note:
We once left a pot meat and potatoes stew on on the counter over night, with the lid on the pot.
The next morning when it was discovered, the food in the pot was "bubbling" and smelled bad.
