Grinds my gears when the gas pump doesn’t have the latch that keeps the pump pumping without you having to hold it. Am I just lazy or is this legitimately annoying?

If you aren’t smart enough to lock the handle with your gas cap, you deserve to be annoyed

Use the gas cap or keep a tennis ball in your car if you don't have one.

Some are tethered to the car and won't reach far enough to use in that manner.

It's very annoying, OP. Not lazy. I like to multitask and leave it pumping while I run in to get some vodka, take a pee, etc.
I just make sure nobody is parked nearby to snake my pump and piggy back 42 gallons on my transaction.

True... do I seem like a ford or a chevy guy to you?

Also, why wouldn’t my truck have a gas cap?

Does not allow for running into the store to take a leak or grab a drink. Gas cap tether is integral and not the kind with the little snap so that's out and used a ball once. When the tank filled the handle released and the damn ball fell out and rolled under another car.

Must be brand new? Why wouldn’t your truck have a gas cap?

Both Ford and chevy got rid of gas caps

And yes OP, I get annoyed as well. I like to clean out trash and organize my console while I pumping gas, so sitting there holding the pump pisses me off. I think a lot of gas stations remove them on purpose for liability issues.
