Asteroids are most definitely flat, so there can't be too much to mine into.

What if after all this time and money sending a rover to the asteroid, it only comes back with some sedimentary rock?

How on earth (no pun) do they make this cost effective?

If sedimentary rock were found in an asteroid, it would be huge news!

Returning anything to Earth wouldn’t really be cost effective. The big advantage is that it’s already up there.
