I have never tried gumbo. After reading this thread, I am definitely gonna try gumbo. You just don't see it on the menu or in kitchens in north Alabama.

I say this as someone born and raised in Louisiana for 25 years; gumbo is very good but people tend to overrate everything that's good about the state.

I much prefer a big plate of jambalaya.

Birmingham has a decent restaurant called Rougarou. You also have Cajun boys and their poboys here too and I know they do gumbo.

I didn't even know what was in it until this thread. I knew it was in the soup genre and that it was a proud tradition in cajun country. I may actually put off trying it until I get to Lousiana. My brother is in the Louisiana state hospital and I will be visiting as soon as all of these restrictions go away. I am very much looking forward to it. I have been to tiger stadium twice but there were so many good options to choose from I haven't gotten around to it. I have never seen it on anyone's table here in north Alabama and I am 44.

They are both great, but it's preference. I like crawfish but prefer shrimp. All of these things also depend where you get it, who cooks it, etc. Gumbo is best homemade and not from a restaurant. Homemade from cajun country like the Mamou/Ville Platte area is by far my favorite gumbo.

Some other good louisiana dishes that I think aren't mentioned enough: catfish courtbuillon, chicken sauce picaunte
