How would you ever be found guilty of blackmail unless they have the foresight to record the conversation?

Their word versus yours. If they pay up, you win. If they don't, you win.

If you wanted this person to "learn their lesson", why wouldn't you just show them the video and have a discussion about it? You just want the $1000 because you're a greedy bastard and you think you'll somehow be less of a rat if you give him the chance to pay his way out before snitching.

Also, does this footage come from a security camera that you're required to check as part of your job, or did you take the video yourself? Depending on the state, it is illegal to record audio/video without the consent of all parties involved.

Nobody learns shite from "discussions". You want him to remember, you make him pay. Give half of it to charity if it makes you feel better (but then again, you'll have to extort twice as much).
