Not speaking for him, but watching Chef Lee describing how “brown” and “crisp” the skin should be is a good indication of knowing the oil is changed and fresh. He described the Popeyes sandwich oil soaked in the batter (which indicates that the chicken was cooked in oil that has not been changed and nasty).


I did not know Susur Lee was famous (don’t watch cooking channels)...but he is recognized as the 10 best chefs in the world currently. Pretty cool he is involved with his kids (going along with the YouTube channels).

Too many restaurants that have a menu that centers around fried foods chanfe the boil by looks and not on a schedule

Iron Chef bags on the quality of the food the whole video but near the end he’s using one of the sauces and he said he was going to season it. Then he said no I don’t need to and his son says “so you’re admitting it’s good?” And Iron Chef goes “ehehehheheh”. Made me LOL.

Same here - before the craze when it was released I had it a couple times in Louisiana and loved it. Both times i've tried it after the craze died down it hasn't been that good.

spicy box and mashed potatoes is a much better order

I was speaking to fried chicken in general. Not the soggy sandwich his son picked up that had probably been sitting in a bag for over an hour.
