Yea, I tried a couple of those, and they taste like some poor fricker made them in his hot garage and left them out in the sun for a month before bottling them.

The rock wall is like the bottom of the straight down water slide. Its a nice place to just hang out.

-Indoor rock climbing isnt a fad. Its been around for ages.
-I dont see that many Escape Rooms. There were a few in Denver I saw when I lived there. I suppose this one could be flash in the pan but ive never done one and dont know much about it. When I think flash in the pan, I think Pokemon Go or Beanie Babies. Those things got wildly popular very quickly and then faded quickly. I dont see Escape Rooms as wildly popular(but I could be wrong)
-Craft Brewery: its beer...which will never be flash in the pan. Ive never seen a brewery open and go out of business. In Denver there are probably 400 of them with new ones opening all the time. People love to get out of the house and drink and the breweries are now starting to get creative with their breweries which make them even more fun places to go out and meet friends.
-Top Golf: I just dont see these going anywhere. People love them some golf

I think what a lot of people don't get is the population is still growing, people are still looking for things to do. If something is done right, it'll be here a while and most of what was mentioned in the op is being operated in a sustainable manner.
That being said, if I had to guess, I expect escape rooms to go first
