It’s a tad more chilly and breezy than I’d prefer, but still a good day to smoke. I usually do baby backs or Boston butts.

Long ago before my kids got old enough for their activities to override mine, me and some buddies competed on the KCBS. Nothing major, only cook-offs around Alabama. My crowing glory was the year my ribs and homemade BBQ sauce both came in top 10 in the pro division at Stokin the Fire down at Sloss Furnace I’m B’ham. That was about 15 years ago I believe. Now I just do it at home for family. Still go old school on the smoker though. No electronics, no pellets, and for sure no insulated or ceramic smoker.

We always keep some claw in the arsenal. They are delightful and refreshing and deliciously trashy.

Broke down 36 pounds of pork, made 20 pounds of sausage and various amounts of ground, chops and roast.
Now that everything is cleaned/put away, gonna get my drink on.

Love me some Claw. I’ll treat myself to an ice cold Claw over ice or a 6 count of Tito’s mixed with a half Claw.
