I worked in a restaurant and the different toppings had names: Orleans, Volland, Acadiana, etc...
We had a special one day, I think it was the Salmon Volland, which was grilled Salmon with a hollandaise, shallots, mushroom and lump crabmeat topping. One of our waitresses rattled off the specials and one guy asked. What about the Salmon Ella? Do you have that today?
The waitress looked at him stupidly as the joke flew over her head like a satellite in orbit.

I’ll give you a few reasons to get sick from laya.
Not keeping pork or chicken on ice prior to cooking. Cross contamination from not washing your hands. Undercooking when barely browning pork or chicken and letting it sit at room temp too long while you cook stock, or aromatics, IOW, allowing product to sit in danger zone. Using bad product like already contaminated pork or chicken or stock. Putting hot food covered in fridge.

All of my seafood cooking skills came from working there for 5 years.

Most likely. Rice is last to be cooked and I can see how someone is trying to just get it out. Bacteria will grow on undercooked rice which can cause food poisoning.

Reality is most of these situations are caused by fecal Contact with food product. Simply someone didn't wash hands after wiping.

I couldn't imagine it would be from that unless it sat up after cooking for a while. Even if the chicken was spoiled most of the bugs should die off when cooked.
