There is a company out there that has ties to Manuel's in the NOLA area that make tamales using pretty much the same recipe. I'd list the company, but I don't want to break any advertising rules. I don't work for them but I buy from them a couple of times a month. It's basically a truck that sets up in different parts of NOLA each week.

There's a Hubigs pie in my Grandpa's freezer, I saw while I was down for Mardi Gras this weekend. I was like OMG a Hubigs, he heard me from the other side of his house and threatened to end me if I touched it. He said he may will it to me when he goes, lol.

Hell, name it "New Orleans Original Pies" and copy everything down the shape and texture.

My favorite was the chocolate. Olde Tyme Grocery in LAF use to sell Hubigs as I'd always get one for dessert after my poboy.
