re: How would your state fare in a war with each of its neighboring states?

This quickly evolves into regional conflicts with centers of power focused around Texas, California, the Midwest (not sure if Chicago would be the focus), the Northeast (most likely New York) and Georgia/Florida (if they don't destroy each other first).
Louisiana quickly sides with Texas as they don't want to be the first victim of Texas expansion. Texas gladly accepts the alliance of his most populous neighbor which gives it access to the ports, refineries and most importantly the Mississippi River without a fight. Plus, it gives Texas a nice buffer to the east. The question will be if Mississippi looks West or East for protection. If East, then the river will be the battle line.
I would assume Oklahoma, Arkansas and New Mexico quickly join the Texan alliance. Arizona would probably be hesitant to leave itself open to invasion from California as Texas would have to go a long way to their defense. The states further north (Colorado, Kansas, etc) would probably try to form their own "Mountain West/Great Plains" alliance, but I don't see this holdout out against Texas and a Pacific Coast alliance of California, Oregon, Washington, Nevada and probably Arizona.
Utah tries to go it alone.
Missouri, Tennessee and the Virginias would be front lines of the battles between the regional powers.
Texas would be in a sweet spot in regards to oil refining adding Louisiana, Oklahoma, Arkansas and New Mexico.

I think Kansas would be the biggest threat. But we have a lot of very defensible terrain. If they come for our Marijuana fields, we'd retreat to the hills until they're so stoned that they can't see straight. Then we'd counterattack and drive them back to the border.

So our neighbors are Mississippi, Arkansas, and Texas.. we definitely aren’t going on the offensive vs. Mississippi or Arkansas. Nothing there worth taking except maybe the MS Gulf coast.
If Mississippi were to try and invade, they aren’t getting across the Mississippi River once we blow all the bridges on the border. They might take the soccer moms on the north shore, but they damn sure ain’t getting past Livingston Parish or NOLA east. We eventually cut off all their supplies along the river and shut down the pipelines to Pascagoula, now their economy is even more fricked than it was before and they give up.
Arkansas can have fun dealing with north LA.. If they’ve seen deliverance they’ll punt.
TX isn’t invading across Toledo Bend, and even if they do they’re in fricking Deridder which is the LAST place I’d want to fight an insurgency. Anywhere with more churches than houses is bad news for an invading force.
So that means all we really have to do is defend Lake Charles and Shreveport. Or maybe just let them have Shreveport..
Meanwhile Mexico destroys TX from within, we block the ship channel and eventually take their Gulf cost from Port Arthur-Galveston without a fight!
