Lava flows because it is viscous, so if you could cool it down somehow, it would stop flowing. But I don't think there's anyway to cool down that much of something that is that hot. And even if you were able to stop or slow it down somehow, it's still flowing from the source.

Digging a trench isn't really a good idea. You aren't going to be able to direct it uphill with a trench. It's already taking the easiest path possible to the ocean.
