I don't know, but one time before a Saints preseason game a group of us went to Dragos before the game and we got to talking with the waiter.
He was saying that he also works for a few suites for home games. It was when there were 4 preseason games (each team getting two home preseason games). He said he lets a friend work the preseason games, but during the season.. He didn't come out and say it, but he was saying for one suite all he had to do was make sure the beer was cold and that they never ran out.
On top of what they paid him to be their server, the people who they invite to their suites tip and that some of them will hand him a hundred and tell him to just keep them coming. Some of those, from time to time, will tip him another hundred after the game, some people will give him $5, $10 each time he brings them a drink.
With that said, I would imagine working at Commander's Palace or the others you listed, one can make a pretty decent living.
I know there are waiters who have worked at these places a long time, do they get health insurance benefits?

No waiter makes $100k a year, unless theyre giving blowjobs in the parking lot after work

A friend of mine has worked at Irene’s for a really long time. Not sure what he makes but I’m guessing it’s pretty solid money or he wouldn’t still be doing it.

My SIL's brother pulls in six figures as a waiter at Chancy's Restaurant in New Orleans.

Some of the old timers at places like Arnauds, Antoine’s etc.. hand out business cards with their contact info so that you can let them know when you’re coming and they take care of everything for you, even get you a good reservation.

I knew this guy that waited at GW fins during the BP Oil spill. I forget the exact number, but he was paid $25k-30k for a quarter’s worth of damaged wages based on his earnings from the past year. He was getting near or clearing $100k easily

It’s certainly possible. But they’re working every Thursday night, doubles on Friday & Saturday, and Sunday brunch to do it. Not to mention every major holiday and event that’s in town. And you better save some of that money for the summer months because it’s lean.
It’s a rough lifestyle, which is why many are blowing whatever they make immediately after their shift on booze, coke, and cigs.

So much of the food service crowd is completely terrible with all things money related.
Plus they blow significant amounts on drinking or drugs across the board I have seen

I knew one who worked at Emeril's back in the late 90's. Says he cleared $85k a year. But every server I ever knew, would go out after shift and blow their cash tips on booze and drugs. Like every single night. I imagine you have to be pretty disciplined to actually save money.

My son works at a chain restaurant (City Works) in Frisco and pulls in over 50 grand a year. Believe it, the high end servers bank.

But what many have alluded to is that being a waiter/waitress has a certain implied lifestyle.
Long hours. You aren’t done with work until like 1am on a weekend. Tired. On your feet. Then you and some of the cooking staff go hang out and party.
Drinking. Some drugs.
A lot of people get wrapped up into it and think making $100k as a waiter is a stable career.
But that lifestyle will burn you out so quick.

Not sure about there but in college I made like 900-1200 per week waiting tables at the City Club of Baton Rouge

Not sure if this is true but I’ve heard the servers at the really high-end restaurants are not paid by the ownership and have to pay ownership to lease their tables. Tips are their sole income.
