I opened a can a couple of months ago that was that old...it was yellow, so I pitched it.

Does Evaporated Milk Go Bad?
quote:
Yes! It does expire but that’s not the end.
It depends on several criteria. For instance: room temperature, way of storage, opened or unopened cans and others.
You have to maintain these factors to ensure that milk remains in good condition.

Any individual can identify the foul smell of milk. It describes that your stored milk is going bad. If the smell is too strong, it is spoiled.
In case, you want to consume this milk. Not only it tastes bad, but also it has some health risks.
It will be better to throw spoiled or expired evaporated milk into the trash.

Not much that stuff gets years so if it’s expired it’s really old.

It will just be discolored but won't hurt you. My wife used a can in the sweet potato casserole that was about 5 years expired. We all lived and no one got sick. I wondered why it turned out a little darker than usual. I checked the cans in the recycle bin and found the evaporated milk can had been expired for 5 years !!!!
