Give them the appropriate salutation in plain English and keep on truckin'.

Pretty sure they understand “hello” no matter what language they speak.

Every Hispanic I know speaks English and Spanish. We whites are severely lacking in the international language community

Are you border patrol? How do you know they are Mexicans, and not Americans?

When I was at the bank, there was this lady teller who would always greet Hispanic looking customers with "Hola! Como Esta?"
That was the only Spanish she knew. Two things would normally happen; the person would say something like "Sorry, I don't know Spanish," or they would start speaking to her in fluent Spanish, and she would have no idea what they were saying.
No matter how many times we asked her to stop greeting customers like that, she kept on doing it, and getting embarrassed in the process.

How about a “S’up”, and a nod.

If they are in american I assume they know english. If they don't I ignore them even though I speak spanish. Assimilate or leave

I usually just speak really loud when they can't understand English. Is that wrong?

Because they’re building houses.

I picked up "wey" from a guy on a jobsite. He would say "whats up wey?!" 30 times a day. Apparently it's derogatory if used in a certain manner. Usually gets a hearty laugh out of hispanics.

I am pretty fluent in Spanish but like you, we are in America and our language is English so that's what I speak to everybody. Honestly, most Hispanic people try to at least greet you in English. After that, it depends on how fluent they are in English if it is just them, However with a crowd of Hispanic people, they will almost 100% converse in Spanish to each other even if they are all fluent in English and most will openly talk about you to your face because most of them think Americans are too lazy to understand them.

Speak very slowly, enunciate clearly, loudly say to them:
“Welcome to America! This is America!”
(Point your index finger down towards the Earth)
You will win them over with this show of hospitality.
You’re welcomed in advance, mon ami.

Why don't you learn where the frick they're actually from instead of thinking that every Hispanic you meet is Mexican?
Now while that isn't racist, it certainly is bigoted.
