UM isn't mandatory, so you can decline it if you feel like its such a ripoff. If you carry Collision coverage, that'll cover your vehicle damages caused by an uninsured driver. Your UM coverage is to cover your injuries caused by an uninsured driver OR an under-insured driver.
Lots of people riding around with insurance, but have state minimum liability limits. Their $15,000 liability limit won't go very far if you end up with any serious injury that racks up expensive medical bills and/or loss of income from time missed from work. UM would cover you here.

I don't work, but when I did I always had short and long term disability insurance.

This is so far from the truth it is laughable.
