Mountain bike out at Cottonwood Valley. Beautiful and a nice break from the strip. Red Rock Canyon is great also.

Helicopter tour, dune buggies in the desert, jump off the stratosphere, rent a supercar for a few laps.

Red Rock Canyon is a good place to clear your head for a few hours. I also enjoyed the Colorado River/Dam raft ride, but it might be a little cold for it now. Mob museum is decent, too, but I think it's a ways away from the strip.
