I always choose a night in New Orleans (good restaurant and drinks) for mine. No material item that I'm dying for.

If you plan on proposing soon, not a bday thing, I would get either a necklace or earrings with a nice dinner out.
If your not planning on proposing she will dump you soon so go for something cheap. No offense but girls around 25 who's been dating a guy 2 years are expecting you to propose soon. They don't put in that time for nothing and the clock is starting to click in their mind. 25 now 1 year engagement now she's 26 then 1-2 years before kids that's around 28 then 9 months for the kid that's close to 29 then a year off then she probably wants two which puts her around 33 which most want all kids done by 35 so if you don't see a future do her a favor and move on

My now 28 year old wife tells me exactly what she wants or puts stuff on pinterest. She's always done this. I think I'm expected to give flowers and card for Valentine's day.
