Specifically, a food you thought was disgusting (or just refused to taste) as a child or young adult, but you finally opened up your mind, gave it a try, and now enjoy? Feel free to add the back-story.
JPinLondon:
SQUASH - refused to eat as a child: worked as a waiter while at LSU; restaurant had a rather sweet squash casserole that I finally decided to try after months of serving it. I really loved it and have now tried winter and summer squashes in all forms, prepared in numerous ways. I've yet to find one I dislike now.
COTTAGE CHEESE - ok, gross, right?
So, dinner with colleagues at a convention in Indianapolis in 2014. No one ordered the side of cottage cheese that came. Waitress says "anyone want it? on the house? or I'll throw it out". I asked her to give it to me. Trepidatiously tasted a small spoonful and was pleasantly surprised. I finished the saucer. I haven't bought any since then, but I do like the stuff.
PEANUT BUTTER & APPLES - ok this one I didn't really know about (so doesn't fit my own criteria above). My wife showed it to me a decade ago. Friggin' good stuff! It is the reason I posted this whole message. My preference is red relicious w/ crunchy PB. Definitely owe the wife a thank you.
Note: if this belongs on the food/drink board, sorry. I never go on that board.

Almost everything, since my parents couldn't cook for shite.
Brussels Sprouts were the biggest offender. You've got to sautee them, throw in a little balsamic. We used to get them served up steamed (from frozen) and unseasoned, always tasted fricking awful.

Spinach - really grew on me
Oysters - started with chargrilled and got hooked
Sweet taters - once cinnamon entered the picture... game over

Up until recently all kinds of stuff. Cucumbers, sour cream, cantelope, cole slaw, eggplant, guacamole (damn, I was missing out).
Still don't like pineapples. Vile weed.
