Art Appreciation freshman year. Dark, cold classroom with a start time of 1:45pm. Perfect time to unwind and just relax after three morning classes. Cool professor who just showed slides and rattled off about art. It actually sparked a love of art that I still have to this day. Once all the kids who studied for the exam left the classroom after finishing in 10 minutes he would give out the answers.

Definitely swimming class. We warmed up with 1/2 mile swim then worked on strokes, water survival and life saving stuff. Loved it and great exercise.

Louisiana History with Mark Carleton, which others have mentioned.
Close runner-up: Civil War History with T. Harry Williams. Fortunate enough to take it the final semester he taught. Very special. (His Huey Long biography is also one of my favorite books)
