You would think those assault ships with attack helicopters have the most advanced fire suppression systems in the world in those hanger bays

If it was in for maintenance/refit it may have had some systems disabled.

Likely a fire not at all related to weapons or munitions. Hell, a fridge or AC unit may have caught fire. Either way, the Navy is down a mini-carrier for a few months.
