They start off hexagonal, but get smoothed out on the way by asteroids and space debris.

It could be that the craft itself doesn't have to create lift or deal with drag, but rather it has to generate a field around it. Circles are efficient shapes, especially in terms of structural strength.

I'm not a Ufo expert, but I believe the come in all different kind of shapes. There have been reports of round, triangular, and cigar shaped UFOs.
