Never used earbuds, so I'm going with headphones

Buds.
Got some nice JBL earbuds with noise cancelling. Sound damn good with plenty of bass.

Ear buds that clip over the ear such as the Powerbeats Pro.

Headphones. Earbuds are uncomfortable and push was deeper into your canal.
Grado 60 or above. Great detail at low levels. They'll pull you into another sonic realm. Open back/ on ear
Any of the BeyerDynamic models. Open back or sealed.
Some of the JBL models. You'll need an app with EQ but they can sound great with the right adjustments,
audio technica AT990X weird headband but sound
All of the above need headphone amps (possibly not the grados), 80 ohms and up aren't efficient enough.

I did the exact same thing. One of my AirPods quit connecting in the case and became a PITA so I bought a set of over the ear headphones.

I have the Sony XM4 and my wife was Bose Quiet Comfort Ultra. Both are incredible sounding with amazing noise cancelling. The QCs are more comfortable but both are pretty comfy. Only downside is these models are $300+

Doubt they still make them but I found some Sony earbuds at Walmart long ago. The ones I have are about a decade old and yet they still work. They were under $20. They have a loop that goes around your ear. They don't fall out. If you can find something like that, they'll work.
Newer phones seems to want to throttle the volume, though. With an older device they are plenty loud. With a new one I still hear the music at the gym sometimes. If you really want to block out gym music, you'll probably need headphones. Sound quality is much better, too.

Stuff doesn't work in my ears, don't like buds. Headphones are bulky, I love these though.
