must be put on the side in the bowl to create a a potato salad(volcanic) island that protrudes slightly above the roux, take a spoonful of gumbo, then potato salad, if you're feeling frisky, then a half a spoon of potato salad, and scoop some gumbo up with that

Should put the scoop on the side just touching the juice, you give yourself an option that way.

Especially if it's a new person who made it, etc.



And personally,..i like a deviled egg on the side with it too.

I believe restaurants that out the rice on top do so with carb conscious folks in mind. You can easily take the rice out in that set up. Not quite as easy to do if the beans/gumbo/ettouffe is on top of the rice.

ETA - That's a complete guess using logic, not necessarily factual.

That’s for presentation and to make sure a customer gets a chosen portion of rice.

Nobody actually does that shite at home or somewhere without an actual waiter. The majority of serving buffets like Piccadilly or catering place even go rice first

I can honestly say I have never in my life gone to a restaurant and ordered red beans and rice. But if I did and they brought them separate I would still put the rice on the bottom. I'd make them bring me another plate if I had to.

No rice in Gumbo either. Sausage is king.

I love all kinds of beans and eat it with sausage all the time, but no rice.

Mayo on shrimp poboys is a classic? Gonna have to say negative

True.

I've ordered ettouffe, and it's fairly common to have the rice on top, but as Ed Osteen said, I'd imagine that's for presentation only.
