Mayo, lettuce, and frid shrimp is a staple everywhere in this state outside of New Orleans. I'm sure some places go without, but some places out rice on top of red beans too.

I don't care whether it's rice on top or bottom...

as long as it's about 4 or 5 scoops of beans to 1 scoop of rice...
