In the 80's we took a flight out of Maui on a DC-10 (en route to DWF w/ a stop in Oahu), guess it was a bit heavy and they dumped a shite ton of fuel out over the ocean before landing in Oahu.

That's not why. If the plane lands with a full tank of fuel it's too heavy and can cause a ton of damage to the plane including taking it out of commission for a bunch of inspections all the way to crashing totally. It blowing up like a Michael Bay movie is like concern number 20 on the reasons why they dont want to land heavy.
They always figure enough fuel for the trip and a little extra so that when a ane reaches its destination it's not too heavy to land
