I do Hilton and get the Executive Lounge like a proper baller. They don't give free drinks to all the riff raff like Embassy Suites does.
Well I don't pay a dime for it, my company does. Plus the breakfast is legit for 7am

The other new trend is to charge a $25 early check-in fee.

I've almost never been turned away when I arrive. As long as you're not arriving at 9AM or some shite, your room has a good chance of being ready.
Of course, front desk employees have a ton of autonomy so your best course of action is being super polite and saying "I'm here to check in, but I know I'm early. No big deal if we need to just check bags". They so rarely get non-assholes that you'll get your room most times, and even upgraded a few times.

They for sure had alcohol a year ago when I was there for a wedding. Grooms family had a room on the floor for the wedding party to meet up and they got pissed at us for getting too rowdy in the lounge

It probably is, but it also rarely matters
I remember maybe 2-3 examples in the last 5 or so years when I couldn't check in early. And on a number of occasions I've checked in really early, like 11AM.
I learned my lesson during a trip to Spain to just book the night before as well if I'm arriving super early.
Hotel was fully booked, wife was cranky, we had landed at 8/9 something AM and it was a chilly morning.
For some reason, be it familiarity or better scheduling, I don't have this issue domestically.
