I would teach my child to finish by breaking the assailant's arm.
He let the bully get up again with no serious injury and the bully was able to renew his attack. What if the bully had a gun? By letting the bully up the kid risked his life needlessly.
Finish. Break the limb.

I think you have it wrong Pectus. I think you've forgotten that, once you break a bully's nose and arm, no bully will frick with you again.
Teach the child how to fight and finish. That gives the child the opportunity to grow up strong and confident, which are two essential qualities and successful adults possess.
I know that what I say seems brutal to some, but, it's not brutal. It's nature's way. The strong will always dominate the weak. So, by teaching the child to be strong and confident, he will become a strong and confident adult.
I'd rather spend my money on music lessons for a child, but, I think that self defense lessons are more important.

The difference between Gracie self defense and MMA. In Gracie self defense, we are trained to end the threat to whatever level you need to go. In MMA, you are trained to go to a tap.

I've always wondered what typically happens when people get put in pressure/pain submissions such as armbars in street fights. I feel like I would let them go if they tapped, and would expect them to cease fighting.

In a life threatening situation I would advise breaking it and possibly going to town on the other arm if you suspect they are armed

That's good. I like seeing that he put his arse down.
My dad taught my brother and myself to not bully/start a fight but to finish it. Been in a few situations where there were some shitheads in which I had step up and take a stand. I was mostly a laidback person but when it came to dealing the bullies, they were getting what they deserved. And don't close your eyes, keep them on the prize.

There wasn't any leg locks there, but a pretty solid takedown to full mount with some impressive ground and pound. Then the bully dangles that arm and sets up for a nice arm bar.
