Adding egg to gumbo isn’t a cultural recipe but a fixer for when one accidentally over-salts their gumbo as an alternative to just adding more water. The egg absorbs the excess salt without thinning it like water would. Some people do the same thing with a potato.

Works the same way.

I like to hard boil the eggs so I can take them out before serving and save them for breakfast the next day.

I don't know where the lines are but I've never felt more at home than on my recent trip to Pierre Part. I grew up in Evangeline Parish and was shocked to meet people who were just as friendly and coonass as us.

Somewheres around Patterson. Morgan City would be an easier location.

East of the Atchafalaya River = Bayou.
West of the river = Prairie.
