Well to start, it isn’t 1874 anymore so people aren’t forced to use what is in their backyard anymore, and secondly I can’t believe you have never seen someone use turtle or gator in jamabalaya

It's what makes outsiders cooking jambalaya so frustrating. It's not complicated, but everyone f&%ks it up by trying to make it complicated for some unknown reason.

Cause we cook food that taste good. Turtle and gator does not taste good in jambalaya.

A real bayou jambalaya is a brown shrimp jambalaya with a big spoonful of white beans on top. That's it. We dont throw a cast net and dump all the catch in the pot.

I do not get this north or south of I -10 shite. I can assure you that people in St Landry, Evangeline, and Avoyelles Parishes are as Cajun or more Cajun than people in the River Parishes. There are supper groups all over the area and we can cook great Cajun food. I can tell you that Jambalaya has never been on the menu here.

Frog legs in a jambalaya is actually pretty legit.

I bet the nutria and walruses wouldn’t be too bad either. lol

Nutria isn't good at all. You have to be a damn artisan to coax a good flavor out of that nasty stuff. I'll eat pretty damn near anything, and every attempt I've tasted to make nutria good has been mediocre at best.

How could you possibly know this if you’ve never even seen a jambalaya containing these meats, let alone eaten one? Are turtle and gator substantively different than the meats typically included in jambalaya?

I’ve had nutria tacos that tasted fine

But that was because it was coated in Mexican seasoning and covered in onions and such

That's one compliment I will begrudgingly pay to Mississippi. They know how to cook the frick out of a Nutria.
