The only nutria I had that was pretty good had been cooked in a crockpot for like 12 hours with a ton of onions and peppers, so same deal. You have to mask the natural flavor and slow cook it to make it even decent.

In theory it is simple, but LL is right.. People do frick it up.. Over the years, buying Jambalaya dinners from people whose kids are selling them for their baseball teams or whatever they are doing to try to raise money, I'd say more times than not the jambalaya is disappointing. I think part of it has to do with whoever is cooking it has never cooked it for a large amount of people so they frick up the amount of ingredients that should go in it.

Then there are those who make it too mushy. There are a lot of people who think they make a great jambalaya and to some people they might do so.. How some people like it, others like it a different way. But for someone to make a good jambalaya, that is seasoned well and is more "universally" liked, it's not something you learn in a day or two.

I'd rather err on the side of mushy than crunchy. There's few things more disappointing than a jambalaya where not all of the rice is all the way cooked.

Also since we have jumped on the Op for not knowing what Cajun is, how many people think they are Cajun and aren’t

I know a bunch of Hymels and Toups that would shite a brick if you told them they were actually German

Also, my last name is technically French I believe. People always call it Cajun, and we certainly intermingled and spoke Cajun French by the end of it, but we have traced our roots to actually France And not Cajun ancestory

Sure am. I will put my lineage up against anyone. Not knocking folks from other areas, but I would have a hard time finding more Cajun folks than I grew up with.

I said it as a joke, but I have had it once that was actually was decent.
They cooked it down with onions and bell peppers in a red gravy over rice. I’m not sure what it’s called my grandmother makes a similar dish with sausage.

First off.. Pot N Paddle is much better than Jambalaya Shoppe.. second.. why not take extra time to actually go to a Cajun town.. hell, my wife (no pics) and I went to Abbeville to a bed and breakfast and the Cajun food we had there was awesome... Then we went to Avery Island the next day. Do that. See some Cajun towns.

Does anyone remember that commercial when Mike Ditka was the coach of the Saints, I think it was for poboy place or something, and he pronounced the G in that word in the commercial? Lag-nap is basically how he pronounced it.
