I just bought a 3.5x3 mirror for my bathroom that has metal trim for $60. Not particularly helpful since you need something double the size though

$554, but I'm on the expensive side in my market. You can probably find a guy in a pickup who'll do it for less.

If it's not framed, I would just call a glass place and have them come and cut it since it's glued.

Not possible to cut it on the wall and the only way to cut an 1/8" off on a 96" mirror is if you polish it down in a polishing machine, which aren't portable.

This.
Carefully take it off, bring it to a glass shop, ask them to cut 1 " off.
I have used capital city glass off of industriaplex I believe.
I think they charge $8 per cut, so you are looking at $10 tops.
EDIT: That's if you bring it to them. Certainly going to be more if you make them come to you.

Cheaper than a new countertop.
I've seen this in a dozen houses reusing their granite. When the cabinet guy is field measuring owners/contractors need to be standing with them to make sure they see the existing granite to be reused. You see what only an 1/8" off has done.
You might be able to get that eighth out of the cabinet.
