I always get a chuckle when I see sheepshead or trigger fish because of their teeth. I typically have a few beers in me by that time, though!

I prefer to look at them in this manner…

Many people who don’t know any better think they are trash fish but they are very tasty. They are a little hard clean but the effort is definitely worth it. Even G W Fins serves them.

The best way is to bake ‘em whole (minus head and guts for the extra dumb) and eat them by running a fork along the spine, like eating a flounder.

They aren't hard to clean, work down the spine, cut over the rib cage. They are delicious.

Excellent table fare especially if caught in clean water. These were caught sight fishing in 10 feet of water in FL. You can bawl the meat and dip in melted buttah and it taste like lobster. Fried they taste like chicken. They are heavy around the awl rigs around Mardis gras. Not hard to clean if you have an electric knife. The Bubba Blade electric is a baw special and highly recommend that all OT users own one. They work well on the Thanksgiving turkey and are better than a sawzall if you need to cut someone's truck nuts off

Trash fish. Guides are pushing them because they are easy to catch and everything is overfished.
Hardheads will be the next delicacy.

It's kind of funny people purposefully catch these now.
I'm not a baked fish person but I hear that is the way for Sheepshead.

I know plenty of people that think sheepshead is a trash fish but will order "bay snapper" at a restaurant.
Best part about sheepshead is there's no limit.
