But again, I won’t lie... just punching the clock and doing a job, nothing more/less, sounds VERY appealing for some reason

A or B. The C job would have you wondering what the hell happened to your life at 60. Understand though, with A or B, if you perpetually make more than what they thought you would, your pay structure will be restructured.

Would it ruin the game if I explained that Job C would be a stepping stone in the government sector (which is surprisingly hard to penetrate unless you’re already a govie) to effectively my dream job...

I started my career in Government IT. I left after 2 years and doubled my income. It was low stress but just didn't pay enough.

I'm a sales manager for a national brand that puts pressure on our outside sales force.
I'll say if your "iffy" at all on A or B, go C. You may land that sales job, but if you aren't putting up numbers, you'll be either fired, or micromanaged to the point that you quit.

My ex GF worked in a tech job for Fedgov. She makes about 115K a year. She started with them after she graduated from UC Berkeley and climbed the ranks. Her job was not stressful except on rare occasions. And her retirement pension is great.
So I would give some thought to Job C.

No, I think it reinforces that you really want to go with Job C. If you can't get to your dream job with A or B, then you have your answer.

Do that, baw. In the meantime, while you are waiting on old Jerry to retire so you can get your dream job, get side work so you can supplement your retirement.
Do your own retirement plan, go with the Govt. pension plan, and make sure you are also qualified for Social Security.

Passion is what you would like to do. Talent is what you are good at.
My advice.
Follow your passion. And only you can decide what that is. You can then develop your talent.
Finally, the money will follow after the experience.

Job A is with a reputable, nationally recognized company with a decent salary... High stress outside sales job.
