Why does the sky look different in different movies? Some look white, some look pale blue, etc.

I'm at a loss as to the flat earthers. When I was in the USAF I had the privilege of working with NASA and daily got to see live footage of the Earth from the space station.

Please explain why they would do this? Do they get less money if it’s different than the photos?

You do realize that this is possible with any film or digital picture?
Much less by atmospheric dust amounts and time of day and angle the picture is being taken in relation to the sun.
That doesn’t mean it’s altered or optimized.

The relative brightness of Earth compared to the stars causes the image of stars to disappear when the camera's exposure is correct for Earth.

That is because water (oceans) and land aren't typically the same color. Water is usually some shade of blue and land is either brown or green, depending on the location.
