Ozone Generator Rental
My work neighbor somehow left a chest freezer full of meat in a van in the parking lot for a week. You could smell dead body stench 500’ away. They cleaned the van and ran an ozone generator in it for awhile and it was like new.

buy two cans of cherry skoal. open them and place them in the cup holders overnight. this is not a joke. i'm as serious as dick cancer.

I've taken charcoal briquets, crushed them up, put then in a small box and placed them in a vehicle once to get rid of a lingering spilled milk smell.

I once buckled a deer in to the back seat of a corolla and it bled through the tarp. Smelled god awful. I ran an ozone generator in it for a day or so and the smell was gone forever.

Time is your friend.
You could try one of the products for when dogs pee on the carpet. The one I got from Pets Smart worked instantly. It breaks up the enzymes in the urine, I would imagine the chicken blood smelling is similar but it's just a guess.

Not chicken but I left a 6 pack of beer in my truck once and it got so hot the bottles busted and it soaked into the carpet. Damn thing smelled like beer for months

Some kind of carpet cleaner plus this:
...spray the area then hit it with the drill brush. Wipe up the residue with a damp cloth. Repeat several times, then hit the area liberally with baking soda carpet deodorizer and let it sit overnight before vacuuming up.
