AC blowing hot air / turning it off and immediately back on fixes it

I know if you have frozen coils turning it off for a bit then turning it back on again will thaw the coils and allow it to cool. But this is not like that. I turn it off then immediately back on and it starts cooling. This is the second time that's happened. What could be the underlying issue?

Sounds like a relay.
Disclosure: I have no idea what I'm talking about.

It is hot flashes. Your ac is going through menopause

Did you try turning it off/back on again?

I have a similar problem. Spent $1500 replacing the compressor, condenser. and blower resister and it still fricking does it. The dealership can't figure anything else out. It's infuriating.

Is the outside unit running before you turn it off, and back on? If not I wonder if you may have a failing capacitor, and turning it off, and on is somehow getting the capacitor work.

Probably needs to be topped off with coolant.

Does it look like this?

was having the same problem last night. coils were dirty, causing my fan to overheat and seize up. Had to replace fan.

Compressor clutch. See if it has oil/shite on it. Clean it off.

You don't say vehicle brand and type.
Most have a door in the ac/heater ductwork that opens and closes (along with other things like compressor coming on) to go from heating to cooling. It sounds like the door is sticking, or going out of sync (if you have driver and passenger split controls) or failing to properly cycle.
Try googling your vehicle and model year and some descriptive wording and see what others are saying. You will be surprised how many of these types of problems are common and already thoroughly discussed on the interwebs (Thank you AL Gore).
Oh some doors are vacuum controlled and failure may be due to vacuum leak.
See what google points you toward.

It's low on refrigerant or the airflow across the evap is restricted due to dirty coils or air filter. Most likely low on Freon

Check your Freon level, but it sounds like the coil that sits behind the compressor clutch is going out.
