Imagine it's easier to time everything but noisy as hell with straight-cut gears.

It isn't really easier to time, geared timing is generally more of a PITA then chains/belts but despite the noise, they are quite useful because they don't stretch which is an issue with a high rpm engine (high valve spring rates) and 48 total valves in this case. The older Ferrari engines with belts used to really drive up the cost of maintenance since prior to I think the 360 it was an engine out operation with a short time/milage schedule.
Looking at that engine reminds me of gear drives used building performance American V8s the ones we used 30 years ago looked like this:
While they still use them they have been supplanted by single idler versions. People back in the day would actually reverse the idlers to create something that approximated roots blower whine but it was viewed like fart cans on I-4s.

Straight cut gears in the Enzo aren't even audible with the racing inspired exhaust system in the car. The Enzo was the equivalent to the McLaren F1 in that they were both street legal race cars.

There is no question the noise did not present an engineering issue with Ferrari for the Enzo, the gears are actually very nice as mechanical noises go and you can hear it, especially at idle.
That said don't compare the Enzo to an F1 the only fair Ferrari comparison is the F40 when it comes to street-legal race cars. Modern hyper-cars still make a lot more consessions to streetability than the F1 and F40.

I know Ferrari’s are horrible about maintenance, but to be honest I have never pulled the front cover off my Enzo. Given it only has 3400 miles on it I don’t think I should

Ahh, the Cammer. It is also an excellent example of the reason for gear drives. Just the link slack from that massive chain forced you to adjust the timing significantly between the banks. That's what happens when you design an engine over the summer. It wasn't long until Crane produced a set of timing gears for it.
