Pure convenience. Brisket is about $3.00/lb raw. Then some spends thetime preparing it and cooking it. Then it has to be chopped and put on bun with sauce, and, then wrapped and put out for you to just grab. Throwing in their overhead for maintaining a clean establishment with fairly paid employees, $8.50 makes a lot of sense under those circumstances.
I go for the club and the house chips, though. Worth it to me and the wife to stop in for a clean place to change our daughter's diaper while grabbing something quick to eat. Even busy, the cashiers have moved people through quickly. Worst for me is the crowds; I hate those no matter where, but I can deal for the short time I'm there.

Deli sandwiches here, too. Pulled pork was no good so I haven't tried the brisket.
Best thing about Buc-ees is new stations opening around them. New facilities w/o the mob of humanity. Until the new ones open Buc-ees is reliable for at least being clean compared to 20-30 year old stations. Dealing with the crowds is just an inconvenience and the people watching is top notch.
