The more the GMO’s enter our food stream, the fatter and sicker the population seems.
It makes me uneasy to wonder if we are seeing that as the results of this GMO food experiment.

That has more to do with the increasingly sedentary nature of our society, massive portion size, and the choice to eat things that taste good vs what is healthy (most go with the former).
All evidence points to the above, while none points at GMO foods. Baseless speculation and fear mongering are the point of the OP.

Most people don’t realize that crops are genetically engineered primarily to be pesticide resistant. They think it’s to make them bigger.
My husband is a rice farmer and as far as I understand, GMO rice helps with pesticide resistance but also with yields. Better yields =feeding more people and sometimes more income depending on commodity prices.
If it says non - gmo or gluten free, it sells. Simple. And crazy.

I think there’s a legitimate question about lack of biodiversity in our crops, for sustainability reasons. But it’s an issue that’s existed since long before gene splicing became feasible. See: cavendish bananas.
Still, since bananas are clones I think they might be an analogue for what could happen with large-scale genetic manipulation of crops. The concern there is not food safety, but susceptibility of the world’s food supply to an unknown future plague.
That said, I feel a hell of a lot better about our ability to recover from that unknown crop plague with gene splicing than I do without it.
