Hey Joe - Billy Roberts (1961)
There is some controversy on whether Billy Roberts was the original writer, but regardless, most people think that Jimi Hendrix wrote it.
Going Up The Country - Henry Thomas (1928)
Canned Heat does a great version, but they didn't write it. The 1928 recording even includes the flute part.

"Everybody's Tryin' To Be My Baby"
The Beatles - 1964
Carl Perkins - 1957
Rex Griffin - 1936
As far as I know, Rex Griffin's estate has never gotten any money from The Beatles' version, which is credited to Carl Perkins

Here are two other versions of Hey Joe that are just as good as the Jimi Hendrix 1967 cover of it.
Hey Joe - Lee Moses (1971)
Hey Joe - Tim Rose (1966)

The Rose version is the one Hendrix based his version on, down to the bass pattern and backing vocals. But it's not as good.
ETA: In case there is any misunderstanding, the Rose version is not as good as the Hendrix

I read somewhere that Hendrix initially refused to record Hey Joe and reluctantly agreed to.

I've read conflicting stories. Some say JH heard Rose's version and decided to cut it, while another says Chas Chandler (ex-Animals bassist) heard Rose's single and went looking for someone to cover it. This would lead to CC finding JH and becoming his manager.

Frank Zappa had a satirical take that poked fun at hippy culture. This was released in March of 1968.

Willy Deville's Hey Joe is the bomb!
So I just spent about 2 hours listening to Willy Deville music on youtube. That is one of the great things about this board, learning about artist you have never heard before. Some really good stuff. I ended up ordering a 3 CD collection off Amazon.

Christone “Kingfish” Ingram is a young blues phenom that covers Hey Joe as well

Clutch “Electric Worry”
song is one part cover song, one part original. Half of each verse is taken from Mississippi Fred McDowell's "Fred's Worried Life Blues."
North Mississippi Allstate also have a version of the song
