I really hope your theory doesn’t pan out 
Not that I think it’s a bad theory or that it wouldn’t be some really great television, I just hate the idea of bringing back another character from the movies that was supposed to be dead, especially one that plays such a big role in the imbalance of the force and just degrades the whole idea of the original story. Mace, for all his badassery, is basically the complete embodiment of what was wrong with the Jedi in the first place.
It would be very fitting to have him come back for a reunion with Boba Fett, but I hope not.

I would like the Jedi that answers to be Oppo Rancisis.
In his favor...
He is known to have survived Order 66.
His species Thissipiassians have multi century lifespans.
In the Legends continuity he was Yaddle's padawan.
It could be possible that he saved Grogu because of his familiarity with the species, and thinking if well hidden the two of them could outlive the Sith and rebuild the Jedi Order and Republic after the Sith are gone.
The big knocks against him are he would be really hard and expensive to animate him, and Filoni never used him in the Clone Wars, so he may not care about him.

It's going to be Ezra. Ahsoka, Bo Katan, and Thrawn have already reared their heads. It's clear where they're going this season.

While I kinda like the idea of mace, sometimes the thing right in front of you is the answer. So many things pointing to this being Ezra Bridger responding to Grogu.
Not saying it can’t be someone else. But there are so many callbacks to Rebels going on I just don’t think it’s anyone but him.
