I found it hard to believe that anyone can make that jump realistically. It was even harder to take Jaime Lannister dressed up like a cholo seriously.
That being said, I still found the movie entertaining.

Does the majority of this movie take place in prison, or when he gets out? i don't like prison movies.

It jumps back and forth in the timeline. It shows what's going on currently then will jump to something that happened in the past.

For a movie that has a little more cred, go with Blood In, Blood Out.
And for a smaller movie where the prisoner goes through a drastic transformation but is done WAY better watch Felon with Val Kilmer.
