Luis Guzman as Jacapo in The Count of Monte Cristo.
He only had like 3 scenes with any worthwhile lines, but you could tell he was a bad MFer.

Heath Ledger as "The Joker". Every single line that came out of his mouth was quotable later. Not a line was wasted for his character.

Quick question:
Can a member of an ensemble cast be a scene stealer?
Because Tim Roth was money in Reservior Dogs. With the rest of that cast, he could have been considered a minor player in that.
Also Jon Favreau in Rudy was awesome as a scene stealer.
ETA: Also Paul Giamatti in My Best Friends Wedding. He had something like 10 minutes of screen time and I came away from that movie thinking "Who is that guy?".
