You find out to some degree in Lindsay's episode. I'm not sure why they chose ostriches as a running gag though. there's been at least one in every episode so far

Just got done with the GOB episode and that's definitely my favorite so far.

The more you watch the more it all starts to come together and the better it gets. The two GOB episodes are up there with anything in the original run. I wouldn't really judge until you're all the way through, it's intended to be viewed as a whole

Wait til the end to judge it. It gets better and better as it starts to come together. It requires a lot of pAtience, but there is absolute gold to be found.
