The Break Up ends with a very ambiguous ending of whether they get back together or not.

Like, oops...WTF just happened? We barely know each other plus you banged my Mom all summer. And Hoffman's like, shite...do I have to marry this chick now? That was maybe a little too impulsive.

I actually thought it was obvious they didn't and the happy ending was a nice goodbye and both being ok with it

Are Dr Grant and Dr Sattler a couple in Jurassic Park? I can never quite decide.

They definitely are, it just never feels like. They are never that affectionate towards one another. And there’s a 20 year age difference.

But when Malcolm asks Grant if Sattler is “available,” Grant lets him know in a very pissed off way that the answer is “no.” But again, never explicitly said out loud for some reason.

And in JP3 she had moved on, but there’s still some tension there

In Star Trek IV, the marine biologist is a half-hearted love interest for Kirk, and I think gives him a big kiss as she jumps into the transporter to leave earth. It's kinda dropped after that, though.

After the “trial” at the end, I think Kirk is expecting that they will spend a few days in pound town, but she hugs him and says “bye…I’ve joined a science vessel”. He is shocked. She leaves him hanging.

Eternal Sunshine? It literally loops them playing in the snow over and over suggesting that it all plays out exactly as it did the first time, and perhaps indefinitely. A year or two of happiness, a few months of misery, memory wipe, repeat.

How long do they keep finding each other in Montauk or the bookstore or wherever? Do either of them ever just grow out of that? The ambiguity is the point I suppose.

It is odd to say now but at the time you couldn't be sure if Luke and Leia were going to hook up after the first star wars movie. There was certainly enough ambiguity from 1977 until The Empire Strikes Back where you couldn't be sure whether Leia would choose Luke or Han. If I recall correctly, there was media speculation about it prior to the release of Empire.

After a recent rewatch, I was curious enough to go googling.

Evidently, there were several scenes shot with them kissing or saying "I love you." Spielberg cut them at the last minute. I guess it was to make their relationship more professional. It still strikes me as odd, though.
