He does it on purpose. This was discussed on the DVD commentary for Ocean’s 11 and was a running gag on the set. Pitt made it a point to be eating in every scene.

He's very good. Notice how he doesn't just start eating the neck willy-nilly, he demonstrates through his gaze that he prefers to eat neck with a proper neck fork but is willing to make do with turning it into a finger food. And you can clearly see that he feels conflicted about eating it without mustard. Brando himself couldn't have conveyed that better, and Brando managed to make butter and anal sex seem tasty together.

Interesting tidbit:
In the first picture you have him in, the crew noticed how much he ate too. So they loaded that thing up with hot sauce.
He ate without complaint during the take.
Promptly threw it up afterwards.
