Why did I waste hours of my life watching her frick around in mereen if she’s just as bad as the Slave owners. Why did I have to hear her and other talk about she’s different than her brother and father for 7.5 seasons but at the last second actually she is just like her father and brother. It completely undermines her entire build to that point.
Umm, that's the point. When everything crumbled around her, she reverted to her true self - the mad queen.

It just seems they skipped a few steps going from ‘ yeah she’s got some dark tendencies’ to a totally murderous psychopath. Going mad queen doesn’t bother me but the route there was pretty sloppy

The people complaining about Jamie just got duped into thinking he was getting a full redemption arc when he told you himself multiple times that he was always going back to Cersei.

I find it a bit perplexing people want a slow burn on someone going mad. If the tendencies and family history is there, it's a pretty quick process in the real world too.

I don't have a problem with her going Mad Queen. It just makes no sense for her to snap after she defeated them and heard the surrender bells ringing. It would've made more sense had she gone scorched earth at the beginning.

Makes plenty of sense.
She wanted to burn KL. She said so last season but Tyrion talked her out of it.
This was her last chance. All her emotions had built up to that point.

Why? It made total sense. Jaime was in love with Cersei. People do otherwise stupid things for love. Jaime even said "The things we do for love." She was carrying their baby. Jaime letting Cersei die alone while he stayed in Winterfell to be With Brienne, or Jaime killing Cersei would have no sense.
