I think Iron Man 2 should be thrown in there. This is really when we start to see Tony’s character start to transform. No character in the MCU has an arc like his. The Tony in Infinity War is a far different Tony in Iron Man 1 in terms of his character development.

To narrow it down to the absolutely necessary watches for plot:
-The Avengers
-Age of Ultron
-Guardians 1 & 2
-Civil War
-Thor: Ragnarok
-Infinity War
Watch those in that order and I'd say you'll be good on the plot and everything. There are some damn good movies I didn't include, but that's the gist.

If you truly want to immerse yourself into the Marvel Universe, just watch them all. I have been doing so with the kids and we have enjoyed it.

Every movie there’s a bad guy who’s trying to take over or destroy the world, then the good guys stop them. Maybe some small collateral damage along the way.

Not sure why people itt are shitting on Black Panther (I’m lying), but you’ll benefit from having an understanding of Wakanda when you get to Infinity War. It shouldn’t be up for Best Picture awards, but it’s a decent origin film.
