One thing in a joust/tourny another in the heat of a fight. Plus Daemon was already scanning the room for threats and the best position to be in where as Cole still using his anger towards the princess to cloud his judgement.
If Cole would have step towards the child and the princess Daemon would have cut off his head before he knew what was going on.

I don’t think it would be that easy. Cole and Daemon are probably the two best fighters left. Harwin Strong was considered the strongest and in the book Cole beat him.

I think you are ascribing more sword skills to Daemon than has been established.
After his campaign in the Step Stones he probably leveled up from his tourney days for sure, but Cole is established as a well seasoned, elite swordsman of the highest order in this era.
I think it would at most an even match at this point, but I would be lean-Cole in a fair fight. Key word a "fair fight" since I dont think Daemon would be stupid enough to chase a fair fight before exhausting other options.

According to Alicent's logic about an eye for an eye, that sounds fair.
Alicent's house stole a dragon expected to first attempt to bond within the family, Rhaenyra gets to take one of Alicent's now, and since the only way to break a bond most of the time is death, thems your rules lol

That isn't really how it works. Maybe I missed them mentioning this on the show, but it definitely isn't something that happens in the book. Dragons aren't like crowns with succession plans. Vhagar was basically a free agent. If Aemond didn't attempt this, and Vhagar rejected Baela, Vhagar could've just lived the bachelorette life eating sheep and sleeping all day.

Daemon won the fight but was dumb for not making cole yield before celebrating. Was a lot like oberyn vs the mountain.
And now daemon has been at war for 10 years while cole has been Alicents lapdog. No doubt daemon is a better fighter

I actually had remembered the fight the opposite, but you are correct.
I actually change my opinion, I'd be lean Daemon at this point in a fair fight(still think Daemon would avoid that at all costs, cause Daemon dont give a frick about honor).

Cutting the hand open to seal a bond always bugs me. You can do serious nerve damage to your hand and ruin your ability to grip a weapon. How about you do a superficial cut and let the blood drip down to your hands.
